Ingredients

  • 4 tuna steaks
  • 2 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cup green beans, trimmed
  • 1 red onion, sliced
  • 1 red bell pepper, sliced
  • 1/4 cup black olives
  • 2 hard-boiled eggs, sliced
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1/2 cup kefir
  • Salt and pepper to taste

Instructions

  1. Preheat a grill or grill pan to medium-high heat. Season the tuna steaks with salt and pepper.

  2. In a large bowl, combine the salad greens, cherry tomatoes, green beans, red onion, bell pepper, black olives, and hard-boiled eggs. Toss to combine.

  3. Grill the tuna steaks for 2-3 minutes per side, until cooked to your desired doneness. Remove from the grill and let rest for a few minutes before slicing.

  4. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, kefir, and salt and pepper to taste.

  5. Divide the salad mixture among 4 plates. Top with sliced tuna and drizzle with the creamy kefir dressing.

  6. Serve immediately.
