Invisible Spinach Smoothie (gluten-free, vegan, ACD, raw)

Hey, where's the spinach in this smoothie? It sure doesn't look green. In fact, this smoothie is a rather unappealing fleshy purple-tan color, not spinach-like at all! But trust me, there's LOTS of spinach in there!
I made this smoothie yesterday for a quick lunch to take with me while I worked on my garden. It was sweet and lovely, shockingly filling, and the perfect lunch-on-the-go, especially for something like gardening when you don't want a big heavy meal in your stomach. And check out the great light on this jar, right? I wish I could shoot food outside more often!

Invisible Spinach Smoothie
yield: about 2 1/2 cups
This smoothie has a balanced mix of protein, carbohydrates, and healthy fats, with lots of fiber that fills you up without weighing you down. A great low-glycemic and satisfying meal-on-the-go!
2 handfuls spinach
1 heaping cup blackberries
2 small carrots, coarsely chopped
1/4 cup sunflower seeds (preferably soaked 4-6 hours)
1 Tbsp flax meal
2 tsp flaxseed oil
stevia, to taste (I used about 5-7 drops of liquid stevia) - you could also use a couple dates, or another natural sweetener of your choice
water
Place all ingredients in blender, adding just enough water to reach desired consistency. Blend until totally smooth, then transfer to glasses or well-sealed jars. Refrigerate any leftovers.

Such a great recipe! As you know I love spinach in a smoothie! I just tried carrot for the first time last week (w/o spinach) and loved it, too. But the two together? Sheer brilliance. ;) Sounds delectably good!

This does look delicious. Do you find you tolerate berries well on the ACD? I haven't had them in years, and I'd love to add them back in but I'm scared it will undo all the progress I've made since stopping abx.
Kim - fruit is REALLY touchy for me, I'll go through periods where I don't touch it with a 10 foot pole and other times where I dabble with berries. I have a harder time with it in winter, it seems, which makes sense seasonally, I guess. I decided to start playing with them again about a month ago, but I'm not sure that it is such a good idea for me at the moment; you know how it is, symptoms come and go! Berries are such low sugar fruits, with less sugar per serving than rice milk or a large serving of sweet potato, so you may be able to handle it - however, the sugar in fruit is absorbed more quickly than the fruit in starchy vegetables, so that may effect you differently. It might be worth a shot, start with a small serving of raspberries or something and see how you feel!
I love this spinach smoothie! I love that there are so many possibilities with it too. I never had made the some one twice! I would love to try this one too!
