Apple Pie Smoothie (gluten-free, vegan, raw, ACD)
This month's SOS Kitchen Challenge features the noble apple, one of my favorite fruits. After gazing upon the pile of apples sitting on my kitchen counter this morning, I was inspired to create a smoothie that tastes like apple pie.
Now, it's been a long time since I've actually eaten apple pie, at least 3 years. No kidding. But this tastes like what I remember apple pie to be like - sweet, tart, cinnamony. And don't be alarmed by the vegetables hiding below the surface of this smoothie, they are barely noticeable. It is perfect for breakfasts, snacks, or a healthful dessert. And so easy to make! WAY easier to make than apple pie.

Apple Pie Smoothie
Yield: about 3 1/2 cups, 1-2 servings
the chia seed helps to thicken the smoothie and give a nice texture. if you do not have it, substitute with ground flax seed, or omit entirely and just add slightly less water.
1 apple
2 small carrots
1 small zucchini
juice of 1 small lemon
8-10 drops stevia liquid (plain or English Toffee flavor), to taste
optional: 1-2 Tbsp natural sweetener such as honey, maple syrup, agave nectar, yacon syrup, etc...
cinnamon, to taste
1 Tbsp sesame tahini (or other seed/nut butter)
1 Tbsp finely ground chia seed
water
Coarsely chop the apple, carrot, and zucchini and place in blender with remaining ingredients and about 1/2-1 cup of water. Blend on high until totally smooth, adding more water as necessary.
Serve with a dusting of cinnamon and a slice of apple.

How delicious this looks and easy too :) Everytime I come to your site I learn something new and find out something tastey that for the most part I can have , everything you do brings such comfort and joy to me .I do not know how to express to you what all your hard work and writing does for me . It keeps me going in a way that helps me SO much . So thank you and big bear hugs to you from me XO . I am trying to come up with a good apple recipe to post before the end of the month .BYE

I made this smoothie, but for some reason it was not that good. I did not enjoy it but perhaps I added too much of one ingrediant or another.
