Gluten-Free Maple Syrup Pumpkin Pie with Flaky Gluten-Free Pie Crust (GF, cane sugar free)

Gluten-free pie crust.

These words struck fear in my heart for years. I tried, and tried, and tried. And each time, I was like "F***!" when I had another crust that just wouldn't roll correctly, was dry and sandy, was tough and chewy, or was just plain weird.

Then back in May, something happened. I made a crust I was happy with. Then I made another. And another. It was reliable. Easy. Delicious. FLAKY. And now I will share it with you, filled with a delicious maple syrup-sweetened pumpkin pie filling. I've made this pie time after time this fall, and it is always a winner with everyone who tries it. I like it best as leftovers, pulled from the fridge and eaten for breakfast.  Continue for the recipe!

Allergy-Friendly, Gluten-free Thanksgiving Recipes

Here in the United States, Thanksgiving is fast approaching.  On Thursday the nation will gorge themselves on turkey, stuffing, potatoes, gravy, those pasty dinner rolls and pie. Lots and lots of pie.  For those of us with allergies, such holiday meals can be like obstacle courses. The traditional Thanksgiving fare leaves those of us with multiple dietary restrictions feeling left out at the family table.  

Fear not! Thankfully, there are many delicious ways to keep the spirit of Thanksgiving without sacrificing your diet.   Here are some of my favorite recipes that are perfect for holiday get-togethers and good enough for your very traditional grandma and your picky uncle to enjoy.

No-Bake Sweet Potato Pie (gluten-free, vegan, low-sugar, grain-free, nut-free)

 No-Bake Sweet Potato Pie

The original recipe for this pie was published in my 2011 recipe calendar A Year to Eat Freely. It was a really fun recipe project that I had for sale through Etsy. While I won't be publishing another calendar for 2012, I really enjoyed the learning process and experience of creating the first calendar. 

I made a few tweaks to the original recipe and wanted to share it with you. It is different than a traditonal sweet potato pie that is baked, but has its own distinctive flavor and texture that is very good. It would be perfect for your holiday table.

Marble Layer Cake with Chocolate Fudge Frosting and Strawberry Jam (grain-free, gluten-free, dairy-free)

 

Do you the blog The Spunky Coconut? If you haven't visited yet, I suggest you do. Kelly creates wonderful recipes that are flavorful, unique, and easy to prepare, and I am consistently inspired by her positive attitude and creative vision. It was she that inspired this beautiful cake!

A few weeks ago I was in search of a recipe for a gluten-free cake for my cousin's birthday. When I landed upon Kelly's recipe for Marble Cake, I did a happy dance inside. Not only was the cake gluten-free, it was totally grain-free. A cake made of beans?! I had to try it. I found a chocolate frosting recipe in another post. Hoping for something a little more extravagant than a sheet cake, I decided to make a chocolate frosted marble layer cake, with my homemade strawberry-chocolate mint jam sandwiched between each layer.

Working with this cake and frosting was an absolute pleasure. Her cake recipes were easy to follow and simple to prepare. The cake was firm and moist, and came out of the pan easily. The frosting was also very simple to prepare, and the result was thick, sweet, and easy to spread. I was amazed; it actually behaved better than some conventional frostings I made in years past! As I sampled bits of cake scraps smeared with frosting and my strawberry jam, I knew this cake would be a winner, and smiled. I haven't made many layer cakes in the last few years, and I was having a blast.

Gluten-Free Birthday Party Ideas: making "potions" at a Harry Potter party

A few weekends ago, I traveled to Northern Iowa to participate in a cob oven-building workshop. My friends were hosting the workshop at their home and I took advantage of the opportunity to stay the weekend with them and their three kids. One of the highlights of the weekend was participating in their 9-year-old son's Harry Potter-themed birthday party. 

The minute I arrived, my friend told me I was going to be the Potions Master and lead the kids in an activity to make their own smoothies (a.k.a. "potions") from fresh fruits. Awesome! We prepared the fruits before the party and displayed them in trays and bowls. To label each magic ingredient, I drew out the names of each on paper with a water insoluble pen, tore it around the edges, and lightly singed each torn edge to make it look old. We grownups came up with some fun ideas for the "magic" equivalents of common ingredients: 

After the kids finished a rousing game of quidditch, it was time for potions. Each child was given a goblet and instructed to fill it up with their choice of fruit and juice. I put the ingredients the Vitamix with a handful of ice, asking them (in a terrible British accent) to tell me what their magical "potion" will do, then flipped the switch. As it blended, I waved my wand (oh yeah, I had a wand) and made crazy sounds for dramatic effect. Then I poured their "potion" it right back in their goblet. A quick rinse of the blender container, and I was ready for the next one!
