Kombu
A variety of kelp (seaweed or sea vegetable). Kombu is exceptionally high in nutrients, and adds good flavor to soup stocks. When added to beans while soaking and cooking, it helps soften the skins and makes them more digestible. Lightly used kombu can be removed, rinsed off, dried, and reused.
