Umeboshi Plum Vinegar
not really a true vinegar, this is the salty brine leftover from the process of making umeboshi plums, containing only plum, water, shiso leaf, and sea salt. It has a 4.5% acidity and carries all the same health benefits as the plum paste. It is salty and tart, and makes an excellent substitute for salt in recipes - it is delicious over grains, popcorn, or vegetables. However, it is high in sodium, so use in moderation. Look for it in the Asian food section of natural food markets; I like Eden Foods brand.
