Umeboshi Plum Paste
a paste made of pickled Umeboshi plums, traditionally used in Japanese and macrobiotic cuisine. Umeboshi plums are picked at the height of ripeness and soaked in a brine of water, salt, and shiso (beefsteak) leaf. Deep purple-red in color, and with a tart, salty flavor, ume plums are used medicinally to detoxify, stimulate digestion, and as a general cure all.
