Fish sauce is a condiment that is made from fermented fish. It is an essential ingredient in many curries and sauces of Southeast Asia, especially in Thai and Vietnamese cuisine. Ingredients are usually very simple, generally made of only salt, anchovies, and a small amount of sugar. Fish sauce has a very distinctive fishy smell and flavor, and melds beautiful with a combination of spicy, sweet, and sour flavors.
